So yesterday dad and I got up early and took a trip to our nearest Tesco as I wanted to do some baking. For breakfast surprise surprise I had porridge with cinnamon, honey and apple it's just so good! So I grabbed everything I needed for baking and can I just say that Tesco is so expensive now, I needed an ice cream scoop as I was making cupcakes and the cheapest one was £3 THREE POUNDS FOR AN ICE CREAM SCOOP!!!! But anyway we also did the weekly shop and we grabbed some reduced sea bass fillets to have for dinner and damn they were good.
When we got home I decided I would just crack on with making the cupcakes and for them I used:
4oz of melted butter (I used stork)
4oz of caster sugar
4oz of gluten free self raising flour (I used dove but you don't have to use gluten free)
3tsp milk
2 medium eggs
A few drops of vanilla essence
Preheat the oven at 190 degrees and put your cupcake cases in your bun tin (I used these super cute spotty ones from Tesco) then you put the sugar and flour in a bowl and then melt the butter either on the hob or I just did it in the microwave for about 1 minute add the eggs, milk, vanilla and butter and start stirring I used a wooden spoon as my dad doesn't have an electric mixer but obviously you can use a kitchen aid or electric hand mixer, mix until the mixture is all smooth (the mixture will be runny don't worry) with no lumps or bumps then spoon the mixture into your cases, I used an ice cream scoop for this as it gives exactly the right amount of mixture but you can use a spoon, then put those in the oven for 18-20 minutes I did 19 and that was perfect for mine then left them to cool. Once they had cooled down completely I decorated them and as it is nearly summer I decided to make them look like little 99 ice creams, now i'm a massive cheat and i'm terrible at making icing so I bought the Betty Crocker buttercream icing (which is beyond delicious), I spooned that on top of the cupcakes (I really should have piped as that would have looked better but oh well haha) and then put lots of sprinkles on them and then added a small flake and they do look super cute I was very happy with them and they taste great you wouldn't even know they were gluten free!
